White Chicken Chili {crockpot cooking}

The food at Bunko this week was phenomenal and I asked for the recipe before I ever left the table.  My friend, Brianna, served White Chicken Chili, homemade bread, a Caesar salad, and a cherry dump cake and we were all bragging on her culinary abilities.  It had been extremely windy all day and we knew storms were looming on the horizon, so the food was welcoming and comforting.  We played all 21 games of Bunko before the rain arrived.  It was a fun night -- and I won a prize!  First time in a long time.

Brianna was gracious enough to send leftovers home with me for my family and they all enjoyed having a taste.  They actually enjoyed it so much, I made it for supper Friday night.  This is an easy recipe that makes a lot and tastes delicious.  I think you'll enjoy making it at your house.  It's perfect for crockpot or stovetop and can be adjusted according to ingredients on-hand.



White Chicken Chili

2 - 3 chicken breasts, shredded
1 stick of butter
1 package of frozen Seasoning Blend (I used Pictsweet.)
1 package of White Chicken Chili Mix
1 8-ounce block of cream cheese
1 pound of Velveeta cheese 
2 cans great Northern beans, rinsed
2 cans white shoe peg corn
1 can Rotel tomatoes
4 cups chicken broth
1 can cream of chicken soup

Boil chicken in water that has been salted and peppered to taste.  Shred chicken.  Reserve broth.  

Sauté frozen Seasoning Blend in butter while letting cheeses melt in crockpot.  Add all ingredients to crockpot and cook on low for 4 - 5 hours.  

OR if you can't wait that long . . .

Place all ingredients in stock pot and cook on stovetop to heat through.  Be careful to stir frequently so nothing sticks or burns.

I served this chili with warm French bread, but cornbread would be delicious, too.

Soup's On! {a virtual soup exchange}



Last night as I was perusing Facebook before I fell asleep {you know, that half dreamy state when you make sure nothing important has happened in the world before you turn over until morning?} a friend of mine shared a blog post about a real-life Soup Exchange.  I clicked that little "save" button on my phone like I do for all the cool things I want to remember, but to just be real honest, I have yet to find where Facebook actually saves my stuff.

Anywho, the girl who wrote the post was talking about a warm and tasty Soup Exchange that she did on a snowy Saturday afternoon.  Each of her friends brought 4 quarts of soup to "exchange" with one another and a bit to share right there on the spot. {Kind of like a Cookie Exchange we did way back in the day at church.} She set up a grilled cheese sandwich bar -- complete with ham and bacon -- and her friends tasted each other's soups, ate warm, toasty sandwiches, and enjoyed their time together.  There were prizes for the best soups, party favors of soup mugs and homemade bread, and everyone left with new soups to eat later.

If you've ever visited here before, you KNOW how much I love soup.  There's just something familiar about a warm bowl of goodness on a cold, dreary day.  I've shared some of our family favorites right here on the blog (and I've shared some of them more than once.  Ha.  My old age kicks in and I forget when I've already given you my recipe.  There's one favorite soup that I've TYPED OUT at least THREE different times for you.  Let me know if you find which one.).

I think the Soup Exchange is a GREAT IDEA.  I'd LOVE to be a part of one myself.  As I dozed off last night, I tried to decide which of my friends might actually agree to come to one if I put it together.  Who would be willing to make and package quarts of soup to share?  And is a quart of soup really enough?  Maybe we'd need gallons?  Hmmm . . .

It truly is cold and miserable outside {at least it's miserable weather for my neck of the woods}  -- definitely not what we are used to, that's for sure.  And I'm always looking for new soup recipes to try out on my guinea pigs family.  As a matter of fact, I've got chicken breast thawing for supper and I'm thinking I'd like to make Chicken and Rice Soup.  Which I've NEVER made -- and am not even sure I'll like.  But for some reason, it's calling my name.

I think it would be super fun to do a Soup Exchange -- but for now I'll settle for a virtual soup exchange.  {I guess that would actually be a soup RECIPE exchange, but that doesn't sound near as warm and fulfilling.}  How about joining me over a bowl of steaming, hot soup?  Would YOU share a soup recipe (or two, or three, or four) with me?  You can leave a link to your favorite recipe or copy and paste it right in the comments.  I'll be trying as many of them as I can and sharing them with all of my friends.

Loaded Potato Soup {crockpot cooking}


We held our Refresh DNow (a discipleship weekend) this past weekend at church for middle schoolers and my mom was in charge of all of our meals.  Friday night was cold and windy and warm soups made for the perfect supper.  Students could choose between three different types of soup -- Taco Soup, Chicken Pot Pie Soup, or Loaded Potato Soup.  Honestly, I wasn't sure how they would take to the Loaded Potato Soup because let's just face it, middle schoolers can be weird, picky eaters. BUT . . . it was a favorite.  As a matter of fact, it was the most requested for seconds so next time we'll just have to make a bigger batch.  That's a good thing.

I only got to eat one small bowl of the soup last weekend due to taking care of "stuff" while all my students and leaders arrived and registered, so I decided to make a crockpot full for supper tonight. It's cold and rainy and I have two meetings tonight, so a meal I could put in the crockpot early and have ready for my family was just perfect.

As you can tell from the ingredients pictured below, I'm a Great Value shopper as much as I can be. The total cost for this delicious pot of soup was only $8.08 (not including the price of the sharp cheddar that I'll use as garnish since I bought the BIG bag.  It was $4.98 but I certainly won't use all of it for tonight's supper.  We use cheddar ALL OF THE TIME and I happened to be out.).  This pot will easily feed the 6 of us with leftovers for tomorrow's lunch.  I like that math.





Loaded Potato Soup

One bag of frozen diced hashbrowns
One box (32 ounces) of chicken broth
One can cream of chicken soup
One package of bacon bits
One block of cream cheese

Place all ingredients except for cream cheese in the crockpot.  Cook for five hours on low so that potatoes cook through.  Add cream cheese and cook one hour more so that cheese melts.  Stir well. Sprinkle sharp cheddar cheese on top of soup to garnish and serve.

Now I splurged and bought a loaf of French bread off of the bakery clearance rack.  60 cents total.  Not bad at all, if I do say so myself.

I'm sure you could make this with fresh chicken broth and fried, crumbled bacon, but the simplicity of throwing everything into the crockpot and walking away was just what I needed today.  If I were going to be home this evening, I might even have made hot cornbread, but crusty French bread will hit the spot, too.  I've got sweet tea ready and the kitchen smells yummy.

Take THAT cold, yucky weather.  Take THAT.

Chicken and Potatoes {crockpot cooking}

There's a new recipe cooking in my crockpot.  I love trying new ideas and sharing them with you, but I always forget to take pictures as I go.  I see all these foodie blogs and they have such gorgeous pictures of ingredients before, during, and after.

So, I snapped this one with the little teaser chicken peeking out:

And I promise to try and remember to take one of the finished product before we devour it at supper.

In the meantime, here's what's cooking:

Slow Cooker Chicken and Potatoes (and Carrots, too)


I sprayed the crockpot with Non-Stick Canola Spray and layered 4 boneless, skinless chicken breasts {frozen, because that's how I roll} on the bottom.  

Sprinkle with salt and pepper, to taste.

Okay, now, I'm cooking like my grandmother -- no measurements:
I added a handful of chopped onion and a handful or two {who's counting?} of chopped celery.  {I keep these both chopped up in my freezer in ziploc bags. It's just easy.}

On top of the chicken/onion/celery combo, I added 6 peeled and cubed russet potatoes and a handful of baby carrots for color and flavor.  {gotta love these "handful" measurements, huh?}

I seasoned all of that with salt and white pepper {'cause the MainMost says potatoes love white pepper} and poured some chicken broth in the crockpot for good measure.  I covered the potatoes in the broth so they didn't turn brown while cooking.

The crockpot is cooking on High and we should have yummy chicken and potatoes ready for supper. Both the Eagle Scout and the Princess have lifted the lid to check it out and we all think it should be pretty tasty on this chilly January day.

I'll let you know when I come back and add the picture of my supper plate.  I'm pretty excited because supper is cooking and I won't have to stress this afternoon. Love my crockpot.

{Edited to add pictures and let you know we added a can of cream of chicken soup after a couple of hours of cooking so that there would be a rich gravy.  Oh, my, how YUMMY.}

Chicken and Corn Chowder -- It's What's for Dinner

It is COLD around here.  And cold weather calls for warm soups.  I've been making this Chicken and Corn Chowder for years and it is superb.  

Chicken and Corn Chowder
(Delicious and Hearty)

2 - 4 chicken breasts, cooked & cubed (I used 3 and it is plenty for us)
5 slices bacon (or the entire package -- whichever you prefer)
1 (4 oz.) can mushrooms (If your family likes mushrooms.  I rarely use this!—I am an anti-mushroom momma.)
½ cup chopped onion
1 can cream of celery soup
1 can chicken vegetable soup (typically, I try to find the Southwestern Chicken Vegetable or the Mexican-style Chicken Tortilla for a little extra pizazz.  We like spice.)
1 (8 oz.) can whole kernel corn (drained)
1 1/4 cups water
1 can Rotel tomatoes
½ cup chicken broth
1 can Golden Corn soup or Creamed Corn (if you can find it.  Golden Corn Soup was my grandmother's favorite and I always used it, but these days it is extremely hard to find. I'm actually not even sure they make it anymore SO I add a can of cream-style corn and think about her.  It's perfect either way.)


Cook bacon; reserve 2 Tablespoons of drippings and use it to sauté onion and mushrooms, if you added them.  Crumble bacon and transfer to large pot with onion and mushroom mixture.  Add remaining ingredients.  Heat to boiling, then reduce heat.  Stir frequently.  Serve when heated throughout.   

OR . . . you can also put all of the ingredients in your crockpot on low while life happens.  Serve with hot cornbread and salad for a great meal when ready.

Here's how I did it today:

Mix all soups, Rotel, corn, water, broth in crockpot.

Chop Chicken

Fry bacon.

Carmelize onion in bacon drippings.

Add to crockpot.

Stir all together and heat.

I just wish you could smell the tantalizing aroma in my kitchen right now.  Sweet tea and hot cornbread will make this the perfect cold night meal.

Stuffed Bell Pepper Soup (another Crockpot Creation)

I enjoyed the deconstruct of the Tater Tot Casserole so much last night, I thought we'd try it again today with something I read about on a friend's Thankful blog post.  We were blessed with some beautiful bell peppers and it's freezing outside, so Stuffed Bell Pepper Soup sounds good to me.  My original stuffed bell pepper recipe is from my mom and was a staple at our dinner table growing up.  I've used mom's recipe and added a few personal touches to make this new soup recipe.  I'm looking forward to it becoming a staple around here.



Stuffed Bell Pepper Soup

1 pound hamburger meat
1 medium onion, chopped
1 or 2 bell peppers, chopped
1 celery stalk, chopped
1 clove garlic, minced
2 cans (14.5 ounces each) diced tomatoes
1 can (14.5 ounces) tomato sauce
1 can (14.5 ounces) beef broth
2 cups water
1/4 cup dark brown sugar
1/2 teaspoon black pepper
1/4 teaspoon oregano 
1/2 teaspoon basil
1 teaspoon parsley
crushed red pepper


Brown hamburger meat with sautéed onions, bell pepper, celery, and garlic.

My favorite beginning . . .

Drain meat mixture and transfer to your crockpot.  Add diced tomatoes, tomato sauce, beef broth, and water.  Stir.

Add dark brown sugar, black pepper, oregano, basil, parsley, and a generous sprinkling of crushed red pepper.

Mix together and cook on low until soup is bubbly good.  Serve with rice, mozzarella cheese, and fresh bread (sharing my my favorite bread machine recipe with you here).

Time to eat

This was a hit.  All family members agree that we'll have this one again.  It was warm and tasty on a cold, cold night.

Southern-Style Hamburger Hashbrown Casserole (in the Crockpot)

One of our all-time favorite family meals is Tator Tot Casserole.  It's a simple, no-fuss recipe that doesn't take long to prepare and can be cooked using just one dish.  Because I knew our afternoon would be a bit crazy and I wouldn't have time to bake it between Girl Scout runs, I decided to see if I could deconstruct the flavors we love so much and make it suitable for slow cooking in the crockpot. The results are out of this world.  My family raved about this Southern-Style Hamburger Hashbrown Casserole and just about emptied the pot.  There were only enough leftovers for three of us to have lunch the next day.  That's a pretty big deal around here.

Southern-Style Hamburger Hashbrown Casserole

medium onion, chopped
celery, chopped
bell pepper, chopped
2 garlic cloves, minced
2 Tablespoons olive oil
1 pound hamburger meat
1 can cream corn (I used the fresh creamed corn we put up in the freezer.)
2 cups cheddar cheese (at least this much, but more is always good)
Velveeta cheese
1 bag (2 pounds) Southern Style Hashbrowns
1 can cream of chicken soup
1 can cream of celery soup
Milk
Salt & Pepper, to taste

It's a little hard for me to give exact quantities for some things because it's really a matter of taste.  I keep chopped celery and bell pepper in my freezer, so I just pull out what looks good to me for each recipe.  Referred to as the Cajun holy trinity of cuisine, onion, celery, and bell pepper is typically used in equal parts.  

Saute chopped onion, celery, bell pepper, and garlic in olive oil.

Add hamburger meat, salt and pepper, and cook until no longer pink.  Drain
melding the tastes together
Spray crockpot with non-stick spray.  This will make your clean up so much easier -- ask me how I know.  Layer meat mixture in bottom of crockpot.  Pour creamed corn over top.

Sprinkle 1/2 of cheese over top of meat and corn.

Top cheese with bag of hashbrowns.  I had let mine sit on the counter top while I cooked the meat, so they weren't frozen rock solid.  Add Salt and Pepper, to taste.

Top with remaining cheese.  I added a few hunks of Velveeta cheese to this layer because it wasn't near about fattening enough.  You can see them peeking out through the grated cheese.  I like the little extra creaminess those hunks provided.

Combine soups and a can of milk.  I used one Cream of Celery and one Cream of Chicken, but you could easily use whichever cream ofs you have on hand.  You can even use two of the same cream ofs.  I like the extra zip that a can of cream of celery offers.  Evenly pour soup/milk combo over cheese.

Place lid on crockpot and cook on high for 6 hours or so until everything is heated through and all bubbly from the melted cheese.  Stir and serve.  Total yumness here.

I served this with hot cornbread (totally gone in the picture above) and dressed-up green beans.  Oh, my stars was it good.  I added a little garlic powder, a lot of brown sugar, and some sliced almonds to the green beans and wowed the family.  I used fresh canned beans, but you can use store bought as well.  And add bacon.  Next time, I'm definitely adding bacon to my green beans.  I'll share that recipe another day -- because you're simply going to want to try it for yourself.

This was good stuff.  And I hear in some parts of the country they call it a hotdish.  But down here in the South, it's a good ole casserole and would be fit for taking to a church potluck or a funeralizing.

Easy Peasy Spicy Chicken Sandwiches

It's been a while since we've had Spicy Chicken Sandwiches for supper and the Eagle Scout asked for them for supper tonight.  It's absolutely the easiest recipe I've ever made, so I happily obliged.  How easy is it to throw everything in the crockpot?

Spicy Chicken Sandwiches

2 tablespoons butter
3 skinless, boneless chicken breasts (you can even throw them in frozen)
1 bottle of hot sauce (I buy the cheapest one I can find)
Ranch dressing

Place butter, chicken, and hot sauce in crockpot on high. This takes just a few hours cook.  I usually add a squeeze or two of Ranch Dressing about an hour into cooking.


When chicken is no longer pink, shred in crockpot.




Stir and serve on buns. It's hot and spicy, but the Ranch cools it down.  
We love this served with coleslaw and chips for an easy, delicious meal.

Easiest Recipe I Make

This is still one of our favorite meals.  The chicken is moist and has a wonderful flavor.  Not too spicy, not the least bit bland.  This is good stuff.

Crockpot Potato Soup

The weather is dreary right now.  LOTS of rain and thunder and lightning.  It is literally POURING right now as I type.   I do like the way it sounds when the rain beats down on our metal roof -- and I'm glad that I'm tucked away inside.  It was a great day to try a new soup recipe and this one was especially easy.  Easy is always good on the first day of school.

Crockpot Potato Soup

8 potatoes, peeled and diced
2 Tablespoons margarine
1 box (32 ounces) chicken broth
water to cover potatoes, if needed
salt and pepper
1 can (12 ounces) evaporated milk
3 - 4 Tablespoons corn starch (just because we like a chowder consistency)
Bacon, cooked and crumbled
Sharp Cheddar Cheese, grated

Put diced potatoes, margarine, chicken broth, salt and pepper in crockpot.  Add water to cover potatoes, as needed.  Cook on low for 8 - 10 hours until potatoes are tender.  Add corn starch to thicken about 45 minutes before you plan to eat.  Add evaporated milk 30 minutes before you plan to eat.  Stir well.  We topped each bowl with crumbled bacon and sharp cheddar cheese and served with cornbread.  Sour cream would be yummy, too.  

This soup was very tasty, but my guys didn't think it was quite as good as another potato soup I make.  I explained to them that THAT soup isn't as EASY as this one was though, and that makes all the difference in the world.  The girls thought this soup was very, very good.  And you just can't beat how easy this one was.  I do love my crockpot.

Hawaiian Chicken = Summer Goodness

Summer Goodness
I'm trying a new recipe tonight in honor of hot summer days.  Straight from the crockpot comes Hawaiian Chicken that we'll be serving over rice.

Hawaiian Chicken

4 boneless, skinless chicken breasts
1 can (29 ounces) Mandarin Oranges, drained
1 can (20 ounces) Pineapple Chunks, drained
4 Tablespoons dark brown sugar
4 Tablespoons corn starch or self-rising flour
3 Tablespoons lemon juice
1 Tablespoon pineapple juice
1/2 teaspoon salt
1/2 teaspoon ginger
1/4 teaspoon black pepper

Place chicken breasts in crockpot.  Combine all other ingredients and mix well.  Pour over chicken breasts and stir.  Cook on low for 6 - 8 hours (depending on how fast your crockpot cooks).  Serve over rice.  (We used the rice cooker and made it a little "sticky" for this meal.)

Thursday's Random Thoughts


  1. Shark Week . . . just shoot me.  Why, oh why, do these shows enthrall the Princess?
  2. Some days are just tough.  Really tough.
  3. Long Leaf Academy opens its doors Tuesday and I've got quite a bit to do.  I intend for there to be more reading of books I deem important this year.  I need to start a list and print a Reading Log.
  4. We'll soon be starting the Family Meal Rotation again and I'm making some changes this year.  I've decided that we'll have Souper Sunday from now until the Super Bowl.  I have quite a few soup recipes that we truly love, but I'm always looking for more.  So, won't you share your tried-and-tested family favorites with us?
  5. I think Mondays will be Crockpot Meals.  That will make the Monday afternoon rush of Girl Scouts and Soccer a little easier.
  6. I love my kids.  All four of them.  Some don't realize the depth of my love and that makes me sad.
  7. #6 makes me feel like I have failed.  I pray they will one day understand how very much they are loved.
  8. My oven hates me.  
  9. I choose to err on the side of HOPE.
  10. This day has great potential.  Always.
