Yummy Soup -- It's What's for Dinner!

Fall might really be here -- the weather was cool yesterday and I even broke out jeans and a hoodie sweatshirt for the soccer game last night!  With cooler temperatures headed our way (if even for just a few days), it's time for soup at our house.

I told y'all a few week ago about my Very Best Idea Ever.  The Monday night chefs chose to do a ham with scalloped potatoes with the hope that I would make a family favorite tonight with the leftover hambone.  Because there was much anticipation over one of our favorite meals, I was happy to oblige.

As I type, Easy Hambone Potato Soup is simmering on the stovetop.  With most of us headed out in different directions this evening, it will be the perfect meal.  I thought I'd share the recipe with you.  Let me know if you make it and tell us what your family thinks about it.

Easy Hambone Potato Soup

A  Family Favorite



3 1/2 cups peeled and diced potatoes

1/3 cup finely chopped onion

3/4 cup diced cooked ham (I actually just boil the hambone.)

3 1/4 cups water

2 tablespoons chicken bouillon granules (I use two cubes)

1/2 teaspoon salt, or to taste

1 teaspoon ground white or black pepper, or to taste

5 tablespoons butter

5 tablespoons flour

2 cups milk



Boil hambone in water — enough water to cover the ham.  Remove bone from stock.  Add the potatoes, onion, ham pieces to stockpot.  Cook over medium heat until potatoes are tender, about 10 to 15 minutes.  Stir in the chicken bouillon, salt and pepper.

In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. (Doesn't that sound like a fancy cook?  In real life, I just pour ALL of the milk in at one time and stir, stir, stir.) Continue stirring over medium-low heat until thick, 4 to 5 minutes.

Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.  Add hot cornbread and a salad for the perfect meal.  Cheddar cheese can be sprinkled over the top for even more YUM!  I actually double the recipe and we have very few leftovers.  Enjoy! Pin It Now!

  1. I always use ham bones in beans. This sounds like a delicious change. I wonder how it would do in a crock pot.
