Welcome Summer!

It's the longest day of the year and the heat index here was 105!  Needless to say, it was HOT!  My sweet Jenner-man had a scrimmage baseball game, then it was time to come home and cook dinner.  One of our newest family favorites is a Sausage Quiche.  Perfect for the day and easy to make.  I thought I'd share the recipe as we make it with you all.

Sausage Quiche

1lb sausage

1/3 cup chopped onion

1 1/2 cup sharp cheddar

1T flour

1T parsley

3/4 t seasoned salt

2 eggs, beaten

1cup evaporated milk

1/4 t garlic salt

1/4 t pepper

1 deep dish pie shell

Preheat oven to 375.  Cook sausage, drain.  Sauté onion in 2 T grease for 3 minutes.  Combine cheese & flour; stir in sausage, onion.  Mix well.  Mix remaining ingredients and add to sausage mixture.  Mix well, pour into shell.  Bake 35-40 minutes or until crust is brown and filling set.  Cool & slice.

Of course, the McBlessings like it so much that we always make two at one time!

Now we are waiting on the MainMost to make it back home so we can enjoy our all-time favorite summer treat:  Blue Bell Ice Cream!
