Oh.my.goodness! Delicious Soup!


So my friend came to do my hair today.  You know, a girl can only go so long between getting a trim and color to hide the gray and root growth -- and 8 weeks may just be too long in my old age.

Anywho, it just so happened that I was gone from home all day and left the children with a detailed list of things to get done.  For the most part, the tasks on my list were completed -- a few tasks will need to be improved upon tomorrow, but I am happy.  

Two of the kids needed a little trim, so they were first and then it was my turn.  Right as I sat down to let her begin with the beautifying process, my never-been-full in HER LIFE daughter piped up and asked that question that makes every mom's heart skip a beat and stomach sink:  What's for dinner?

Of course, having been gone ALL DAY (did I mention that?), I had absolutely ZERO idea of what deliciously healthy meal I was going to make magically appear on the table before my children in the next 30 minutes.

And that's when my friend SAVED the day and shared the easiest and BEST-ever soup recipe.  And because I'm just that kind of a friend, I'm going to share it with you.  I had some things on hand, but my sweet MainMost was on his way home and didn't mind stopping to pick up the rest.  I turned on the soup pot and started heating up what I had, turned the heat down low, and waited for him to get home with the rest of my ingredients.  All I had to do after that was open cans and pour, chop green onions, and stir until heated through.  We whipped up a pone of cornbread and waited patiently while she fixed my hair.  

Simple Simon -- and utterly delicious.  So good that every person here ate TWO bowls right off the bat.  There's very little left and I just caught my "never-full" child eating her THIRD bowl.  Can you believe it?




The EASIEST, most DELICIOUS soup Recipe -- EVER:

Crawfish Chowder


1 can cream of mushroom soup
1 can cream of celery soup
2 cans Clam Chowder
1 can whole kernel corn
1 package crawfish tails
1 bunch green onions, chopped
1/2 - 1 pound Velveeta cheese, cubed to melt easier
chicken broth (can or box or fresh -- whatever you have on hand)
Can add Milk or Half & Half or Heavy Cream for desired consistency
And my friend adds 2 cans cream of potato soup -- but the MainMost couldn't find any and our soup was PERFECT without it.

And THAT, my friends, is IT.  Entire recipe.  Just heat through and serve.  And did I mention it was FANTABULOUS?  It is deliciouso.  The cornbread was perfect on the side -- but garlic bread would be wonderful, too.  Give it a try.  You will LOVE it.  Guaranteed.
