Just call me Martha . . . or Betty

Half of my kids are at camp this week and the MainMost is home today.  Stomachs are starting to growl and folks are getting hungry.  I was in the grocery store recently and found thin cut chicken breasts on sale so I bought a package to try out.  I usually buy BIG packages of boneless, skinless chicken breasts so these were a treat.

I found a recipe on Pinterest that looked pretty good, so I thought I'd give it a try today.  I was second-guessing myself right off the bat though because it calls for 4 cloves of garlic.  WOW!  That's a lot of garlic.  But . . . I had everything handy and decided to keep going.  I'm glad I did.  At this moment, brown sugar and garlic glazed chicken breasts have my house smelling incredibly good.

Here's what I did:

To start off, I sauteed the minced garlic cloves in 2 teaspoons of olive oil.  {That was a divine smell in and of itself.}  When the garlic was soft, I added 4 tablespoons of brown sugar -- give or take a few.  {Okay, well to be honest, it was GIVE a few.  I do like brown sugar.}


I sprayed my 9 x 13 glass dish with canola and placed the chicken inside.  A little salt and a big shake of pepper had me ready.  I quickly spooned the brown sugar and garlic mixture over the top of the chicken (see picture) and stuck it in my 500 degree preheated oven.  {Mmmm, mmmm.}






After just 20 minutes, the chicken was ready for the family taste test.  The Boy Scout had whipped together some mashed potatoes and it was time to eat.  The chicken was juicy and tender and we didn't even need a knife to cut it.  Doesn't it just look delicious?  {And the potatoes were good, too.}


The MainMost declares this new recipe a keeper.  He actually declared it a keeper twice!  He even had an idea about what we could do with it next time by making rice for the side.  The Boy Scout and my Artist both said they liked it, too -- and they are the pickiest eaters in my house so I'm sure the others will approve as well.  I think next time we'll add a big green chopped salad on the side. 

We did joke about the garlic -- I'm not sure folks will get too close to me at church tonight -- but I've got to tell you, the taste was worth it!

Yummy!  Give it a try.  Your family will thank you.

  2. Yum! I'm going to have to try this one soon. My family loves chicken with 40 cloves of garlic, so I bet we could handle the 4 in this recipe.
