Blackberry Cobbler

I just slid a blackberry cobbler in the over for our afternoon snack.  YUMMY!

It's the easiest recipe ever -- one passed down to me by my mother and mother-in-love.  My mother-in-love called it a Poor Man's Pie.

Poor Man's Pie/Cobbler

2 cups seasonal fruit
2 cups sugar

Cook down on stovetop until juicy and smelling delicious.  While fruit and sugar cook down, melt one stick of butter in 9 x 13 dish.

Mix:
1 cup milk
1 cup self-rising flour
1 cup sugar
Vanilla to taste (we like a lot!)

Once butter has melted, pour flour/sugar/milk mixture into 9 x 13 dish.  Spoon fruit and sugar mixture over the top.  Bake at 350 degrees for about 30 minutes -- it will be a golden brown on top.  Serve warm with ice cream.  Delicious!

  1. This is one of my ultimate comfort foods. I remember making it in my dorm's kitchen when I was homesick in Houston...long ago.
