Summer Veggies and Blackberry Cobbler

I went with easy but delicious for supper tonight.  Dirty Rice is one of our family faves.  Paired with Baguettes, fresh corn, green beans, and grilled zucchini and squash from the garden made for a perfectly wonderful meal.

For dessert, I made a Lazy Man's Cobbler with fresh blackberries I picked this afternoon.  Served hot out of the oven with a scoop of ice cream on top (Blue Bell, of course) was the perfect complement to our dinner.  Life is good.  
Fresh Blackberry Cobbler
This is the easiest dessert recipe I have.  Enjoy.

Lazy Man's Cobbler

1 cup of fresh fruit
1 cup of sugar
Cook these together on the stovetop until the fruit juices meld with the melted sugar.

Melt 1 stick of butter or margarine in the oven in a 9 x 13 dish.

Mix 1 cup self-rising flour
       1 cup sugar
       1 cup milk
       1 teaspoon of vanilla extract

When butter has melted, pour batter into dish.  Spoon fruit and sugar mixture over the top.  Bake in 350 degree oven until golden.  Serve hot with ice cream for a yummy summer treat. Pin It Now!
