Roasted Okra? Yes, Please

Oven Roasted Okra?  Oh.my.goodness.

I really like okra.  I'm a total Southern girl and fried okra has always been one of my favorite things, but then I married my MainMost and his mom introduced me to slimy fried okra.  Boy howdy, is that stuff good.  I just wish I could make it like she does.

Since I can't (and believe me I've tried), I've been looking for another way to cook my okra when she sends it my way.  I stumbled upon a really neat recipe today and tweaked it to fit my crew.  It was delicious.

I actually only made a few pods thinking I'd try it and see if it was worth making a bunch.  Don't know what I was thinking since the McBlessings chowed down on it.  Definitely a keeper and definitely easy enough to make again.  Here's what I did:

Oven Roasted Okra

Okra pods, washed (cook more than you ever thought you'd eat because these things are DELICIOUS)
Canola Oil Spray
Sea Salt
Pepper
Parmesan Cheese

Slice okra pods lengthwise.  Lay on cookie sheet, seed side up.  Spray lightly with canola oil.  Sprinkle with sea salt, pepper, and parmesan to taste.  Bake for 10-15 minutes in 350 degree oven.

  1. I know I would like that. My Granny taught me how to dehydrate okra in the oven. We always eat more than we are able to freeze for later.
